Nutritional and health benefits of Cassava cookies

Abstract:

Cassava (Manihot esculenta Crantz) is a starchy tuber crop widely grown in tropical regions. Its use in cookies offers a gluten-free alternative with various nutritional benefits. This review highlights the nutritional composition of cassava, its health benefits, and its incorporation into cookies. The potential of cassava cookies to address dietary needs, including celiac disease and other health concerns, is explored, supported by tables and figures illustrating nutritional data and health impacts.
