Abstract:

Seeds are nutrient-dense powerhouses that serve as vital components of a balanced diet, offering various health benefits. In recent years the consumption of nutritional seeds has been subjected to food and nutrition trends as consumers become more aware of the health benefits. Nutritional seeds are rich in essential macronutrients such as proteins, fats, fiber, carbohydrates, and micronutrients like vitamins, and minerals. Seeds like fennel, chia, quinoa, sesame, poppy, pumpkin, sunflower, hemp, etc, are sources of dietary fiber, omega-3 fatty acids, and plant-based protein. Their bioactive compounds, such as lignans and polyphenols, are crucial in reducing inflammation and supporting metabolic functions. Seeds like chia and flax are particularly valued for their omega-3 content, supporting brain and cardiovascular health. This review explores seeds' nutritional profiles, health benefits, and practical applications in dietary interventions and functional foods.
