Development and evaluation of value added product enriched with Moringa oleifera (Drumstick) pod pulp

Abstract:
Moringa oleifera (drumstick) is called miracle vegetable and is valued as medicinal and functional food. Almost every part of the moringa tree, viz. fruit, flower, seed, bark, gum, and root is a rich repository of proteins, vitamins and minerals including calcium, potassium, phosphorous, iron, folic acid as well as β-carotene. Looking to the functional attributes and medicinal properties of moringa, the pulp can be used in various food products for value addition. The moringa processed pulp was added in gujarati dal. Moringa pulp can replace the pigeon pea up to 11.27 % to improve the nutritional value of product. The product will be enriched with essential amino acids, phytochemicals and iron along with other nutritional enrichment.
