Abstract:
The dried seeds of musk melon (Cucumis melo) and water melon (Citrullus lanatus) were analyzed for different characteristics such as nutritional, phytochemical and antioxidant activity to understand its potential benefits. The nutritional analysis shows that the seeds are a good source of energy, carbohydrates, fat, proteins and minerals such as calcium, iron, magnesium, phosphorus and potassium. Phytochemical analysis reveals that the seeds are a good source of flavonoids, phenolics, saponins, alkaloids and other secondary metabolites. The oil of seeds was extracted by cold pressing and analyzed for various parameters such as iodine value, saponification value and fatty acid profile. The results revealed the high iodine value and presence of polyunsaturated fatty acids such as omega- 6 (linoleic acid), monounsaturated fatty acids such as omega- 9 (oleic acid). It also consists of saturated fatty acids such as palmitic acid and stearic acid. The seeds provide opportunities to develop as value added products, dietary supplements and medicines.
